El Gofio A "bread" made with wheat flour, barley, maize or chickpeas, which is roasted then mixed with water or milk to form a ball
Puchero Canario A stew made with pumpkin, sweet potato, potato, chickpea, salted fish and is served with mojo
El Mojo A dressing made with oil, vinegar, garlic, salt and various spices.   Red mojo uses paprika,  green mojo uses coriander and el mojo picón used piquent peppers
Las Papas Arrugás Potatoes boiled in their skin and served with mojo
